  • 200g spiced tempeh cubes

  • 2 onions, thinly sliced
  • ¼ each red, yellow, and green bell peppers, sliced
  • 1 tsp cumin powder
  • 2 tsp chaat masala (divided)
  • 2.5 tsp Kashmiri chili powder
  • 2 tsp tomato ketchup
  • Salt, to taste
  • 2 tsp fresh coriander, chopped
  • 2 tsp ginger garlic paste
  • 4 tsp non-dairy curd (plant-based yogurt)
  • ½ tsp dried fenugreek leaves (kasuri methi)
  • Chapathi or Indian bread of choice
  • Mint chutney, to serve

Instructions:

  1. Prepare the non-dairy creamer paste by mixing the non-dairy creamer with 1 to 2 teaspoons of water until smooth. Set aside.
  2. Using a heavy-bottomed pan over medium-low heat, dry roast sliced onions until translucent and golden, stirring frequently.
  3. Add the sliced bell peppers and dry roast for 4–5 minutes until softened but still vibrant.
  4. Sprinkle cumin powder, 1 teaspoon of chaat masala, Kashmiri chili powder, and salt; stir to combine well.
  5. Mix in tomato ketchup, creamer paste, and fresh coriander; keep warm.
  6. In the same pan, dry roast tempeh cubes for 5–7 minutes, turning frequently until browned and slightly crisp. Add a splash of water if needed to prevent sticking.
  7. Spread non-dairy curd evenly on chapathi or your choice of Indian bread.
  8. Layer the roasted tempeh on top, followed by the vegetable filling.
  9. Sprinkle remaining chaat masala and kasuri methi over the filling.
