Ingredients:

  • 400g boiled chickpeas, drained
  • 100g Coconut Milk Powder
  • 1 medium onion, chopped
  • 3 garlic cloves, minced
  • 1 tbsp fresh ginger, grated
  • 1 tsp turmeric powder
  • 1 tsp cumin powder
  • 2 cups fresh spinach
  • Cooked brown rice, to serve
  • Salt, to taste

Instructions:

1. Heat a pan and sauté the chopped onion in 2 tablespoons of water until soft and translucent, about 5 minutes.

2. Add the minced garlic, grated ginger, turmeric powder, and cumin powder; cook for 1 minute until fragrant.

3. In a separate bowl, mix Coconut Milk Powder with 500 ml water until smooth and lump-free.

4. Pour the coconut milk mixture into the pan and add the boiled chickpeas. Stir well.

5. Let the curry simmer for about 10 minutes on medium-low heat, stirring occasionally until thickened and flavorful.
